This is perhaps the simplest recipe of all time:
1 can, or 2 cups cooked pinto, kidney, black beans (or a mix), liquid with liquid
1 tsp coriander
2 tsp cumin (optional)
1/2 salt or to taste
1-2 cloves garlic, pressed
1-2 tsp olive oil
1/4 cup shredded mozzarella or pepper jack cheese (optional)
cilantro or scallions for garnish (optional)
Put olive oil into an iron skillet or frying pan. Add cooked beans, and mash with a potato masher to desired consistency. Add remaining ingredients, except cheese, and stir/mash together. Just before serving, sprinkle cheese over beans, if using, and garnish with cilantro or scallions. Serve with tortillas or other dishes (rice, taco filling, etc.)
